Couscous Salmon Salad

  • 1 cup couscous, cooked

  • 1 tbsp olive oil

  • 2 salmon filets, cooked

  • 2 cups broccoli, cut & stalks removed

  • Juice from 1 lemon

  • Seeds from 1/2 pomegranate

  • 2 tbsp pepitas

  • 2 handfuls fresh watercress (or another leafy green)

  • Olive oil + lemon, to serve

Cook couscous, steam broccoli, and prepare salmon filets. After, mix together couscous, olive oil, broccoli, pomegranate seeds, pepitas, and lemon juice. After mixed, chop watercress and toss with couscous mixture. Top with salmon filet and season with additional lemon and olive oil, if desired. *2 servings
