Crockpot Chicken Fajitas

  • 1 - 1.5 lb chicken breasts

  • 1 medium onion, diced

  • 1 green bell pepper, sliced

  • 1 jalapeno, seeds & diced

  • 2 garlic cloves, minced

  • 1 tbsp fresh cilantro, chopped

  • 1 tsp chili powder

  • 1 tsp cumin

  • 1 tsp coriander

  • 1 can diced tomatoes with green chili peppers (low sodium)

Place everything in crockpot. Cover and cook on high for 4 hours, or low for 8. Shred with a fork. Serve over 1 serving brown rice, in a tortilla for a burrito, or create a salad / lettuce wrap.
