9 - 12 eggs
1/2 lb lean turkey (can also do sausage or bacon, but turkey is healthiest)
1 green, red, or yellow bell pepper, diced
1/2 onion, diced
1/2 cup kale or spinach, chopped
Salt, Pepper, Paprkia - to taste
Coat muffin tin with oil or butter and preheat oven to 350. Cook turkey over medium heat. Whisk eggs together. Add turkey, veggies, and seasonings to bowl. Spound the mix into the muffin tins, filling each about 3/4 full. Bake for 20 - 25 minutes. Cool for a few minutes and then gently remove using a knife to loosen sides. *could add cheese, but we prefer without!
