8 thin slices sirloin or flank steak
1 green bell pepper, cut into strips
1 red bell pepper, cut into strips
1 zucchini, cut into strips
1 onion, halves then thinly sliced
Rosemary, Salt, Pepper
1 spoon olive oil
1 garlic clove, minced
1/4 cup balsamic vinegar
2 tbsp red wine
2 tbsp brown sugar (or honey)
1/4 cup beef or bone broth
Rub each side of steak with olive oil and seasonings. Heat a bit of oil in skillet over medium high and cook all veggies until done, season how desired. Put cooked veggies on one end of the steaks so you can roll. Roll it up, secure with toothpick and repeat!
Next the glaze, heat olive oil over medium heat, add garlic and cook until fragrant. Add balsamic, red wine, sugar (or honey), rosemary, and bring to boil. Reduce heat and simmer uncovered for 5 minutes. Add broth, return to boil, reduce heat and let simmer for 15 more minutes.
Prepare grill and grill each steak on each side for 2 minutes, same if on skillet. Serve with glaze over.
