Crockpot Cabbage Rolls

  • 1 head of cabbage

  • Protein (lean turkey, turkey sausage, chicken)

  • 1 cup brown rice

  • 2 cans Italian diced tomatoes

  • Additional filling ideas: Onion, peppers, corn, peas, zucchini, celery, carrots - really whatever veggies you like

  • Bay leaf

  • 1/4 cup vegetable broth

  • Garlic / salt / pepper / oregano / italian / chili

Core cabbage and boil until soft. Meanwhile, cook rice in water and with a bay leaf. Cut up desired veggies. Once cabbage is cooked, peel leaves off, doing your best to keep intact. Mix rice and veggies together in a medium bowl, incorporating one can of tomatoes. Season with garlic, salt, pepper, oregano, Italian, and chili. Once filling is mixed together, put 1/3 cup in each cabbage leaf, roll, and set in crockpot. Once filling is gone, top cabbage rolls with second can of tomatoes, veggie broth and any additional seasonings you'd like. Cook on high for 4 hours.
