Crockpot Pork + Quinoa

  • 3-4 pound lean pork shoulder

  • 1 ½ teaspoons salt

  • 1 teaspoon pepper

  • 3 teaspoons oregano

  • 2 teaspoons ground cumin

  • 1 tablespoon olive oil

  • 1 onion, sliced

  • 4 cloves garlic, crushed (not minced)

  • 4 oranges

Rub seasonings on pork and place in crockpot. Add onions, garlic and the juice of 2 oranges. Cover and cook on low for 8-10 hours.

For the quinoa side:

  • 1 cup quinoa

  • 1 tablespoon olive oil

  • 1 tablespoon freshly grated ginger

  • 1 clove garlic, minced

  • 1 green onion, sliced

  • 2 cups broth

  • 2 tablespoons soy sauce

  • 2 cups spinach

Cook quinoa as directed on package but use broth instead of water. In a saute pan heat olive oil for 1-2 minutes and then add ginger, garlic, onion, saute for 3-4 minutes. Once quinoa has finished cooking, add the ginger, garlic and onion along with remaining ingredients. Toss to combine and serve with pork along with orange wedges.
