Coconut-Lime Rice

  • 1 head cauliflower

  • 2 tbsp coconut oil

  • 1/4 cup coconut milk

  • 1 tbsp cilantro

  • 1 tbsp lime juice

  • Dash of sea salt

Place cauliflower in food processor, until chopped into ‘rice’. Heat coconut oil in large skillet and cook over medium heat for about 5 minutes. Add the rest of the ingredients and simmer for 20 or so minutes - until cauliflower is tender.
