One Pan Roasted Dinner
4 chicken breasts
2 sweet potatoes, chopped
3-4 cups vegetable(s) - broccoli, asparagus, cauliflower, brussels, carrots, etc.
2 tbsp olive oil (or coconut oil)
Fresh garlic, minced
1 tsp rosemary (or fresh)
Salt & Pepper
Heat oven to 400 degrees. Place chicken breasts on pan along with chopped potatoes and vegetables. Pour olive/coconut oil over pan and season with garlic, rosemary, salt, and pepper. Bake at 400 for 30 minutes or until cooked throughout and tender.
