One Pan Roasted Dinner

  • 4 chicken breasts

  • 2 sweet potatoes, chopped

  • 3-4 cups vegetable(s) - broccoli, asparagus, cauliflower, brussels, carrots, etc.

  • 2 tbsp olive oil (or coconut oil)

  • Fresh garlic, minced

  • 1 tsp rosemary (or fresh)

  • Salt & Pepper

Heat oven to 400 degrees. Place chicken breasts on pan along with chopped potatoes and vegetables. Pour olive/coconut oil over pan and season with garlic, rosemary, salt, and pepper. Bake at 400 for 30 minutes or until cooked throughout and tender.
