Paleo Chicken Parmesan

  • 4 chicken breasts, thawed

  • 1 cup almond flour

  • 1/2 - 1 tbsp garlic (depending on how much you love garlic)

  • 1 tbsp italian seasoning

  • 1 tsp salt & pepper

  • 4 egg whites, whisked

  • Fresh or canned diced tomatoes

  • Gluten Free Noodles (liveGfree and Banza are our favorites)

  • Follow Your Heart Cheese, sliced or shredded (optional)

INSTRUCTIONS

  1. Whisk egg whites together in a small bowl.

  2. Stir flour and seasonings together in another small bowl.

  3. Get chicken breast, dip into egg whites and then into mix. Cover thoroughly. Repeat with all chicken.

  4. Place into Air Fryer for 25-minutes.

  5. While chicken is cooking, simmer tomatoes (or sauce, watch sugar content) + cook noodles.

  6. When everything is done, pour noodles into bowl, top with chicken, tomatoes, and cheese + any other seasonings you may want.

* If you don’t have an air fryer, you could bake or cook on the stovetop (I would use coconut oil).
